Midnight Symphony

We made a mead with three rich dark honeys: buckwheat blossom, avocado blossom, and knotweed blossom. Then we aged it in an Elijah Craig bourbon barrel. The final product presents a symphony of flavors with deep layers of dark chocolate, coffee, and caramel, all highlighted by the spirit character from the barrel. We could listen to this song forever and hope that you enjoy the performance on your taste buds as well.

As an added bonus…the mead maker’s wife thinks this is the best thing he’s ever made!
